Looking for a quick and easy stir fry recipe that won’t mess with blood sugar or ketosis? Look no further. This recipe is packed with veggies, healthy fat and protein and takes less than 20 minutes to make.
Ingredients (serves 2):
2 boneless, skinless chicken thighs, cut into 1 inch pieces
1 cup broccoli florets
1 cup sliced green or napa cabbage
1 cup sliced mushrooms
1 small onion, finely chopped
1/2 cup avocado oil mayonaise
2 tablespoons extra virgin olive oil
1 tablespoon ghee
1/4 teaspoon powdered ginger
salt and pepper to taste
In a large pan heat the ghee to medium and add the chicken. Cook stirring occasionally until chicken is cooked through (about 8 minutes).
Add the veggies and cook until veggies are soft, about 7 minutes, stirring occasionally.
Add the mayo, olive oil, salt pepper and ginger and stir to mix. Serve over mixed greens or spinach or enjoy as is.
